Great Day Morning Show: Fried Okra (Kurkuri Bhindi)
In this segment of the KMPH Fox 26 News Great Day Morning Show, Katherine shows the hosts how to make a simple savory snack using Puffed Lotus Seeds (also known as Phool Makhana or Fox Nuts).
Here is the written recipe for the Indian Okra Fries (Kurkuri Bhindi) we made in this segment:
Ingredients:
2 cups Okra
1/4 cup besan flour (chickpea flour)
1/2 teaspoon Bombay Blonde Garam Masala
1/2 teaspoons Bombay Blonde Chaat Masala
1/4 teaspoon turmeric powder
1/2 teaspoon Kashmiri chili powder
1/2 teaspoon cumin powder
1/2 teaspoon amchur powder (dry mango powder)
1/4 teaspoon salt (or to taste)
1/2 teaspoon Lemon Juice
oil (for frying)
Directions:
Cut okra into long, thin strips. In a medium bowl, mix together besan flour and all additional spices. Toss the cut okra with the besan spice mixture, making sure to evenly coat each piece of okra. In a large frying pan, heat oil. Add okra and shallow fry just until it starts to brown (be careful not to burn them!). Remove okra from the oil and sprinkle them with additional salt and Bombay Blonde Chaat Masala, coating them evenly. Lastly, if desired, add a squeeze of lemon juice to the okra.
