GARAM MASALA
When people think of an all encompassing Indian spice mix, they usually think of "curry powder." Curry powder was invented by the British as a generic way to mimic the amazing Indian spices they tasted while in India, but the truth is that curry powder is not that common in real Indian cooking. What is common, however is Garam Masala. This aromatic spice mix is common in most Indian households, and its ingredients can very drastically from state to state and household to household. My mix is based on my own personal preferences after 20 years of cooking Indian food and learning which percentages of the many spices options available, that I prefer to stand out in my dishes.
